BANDEJA PAISA




The paisa tray, a dish for the brave
They see this dish as a challenge for the brave, because its main feature is abundance, able to satisfy anyone's appetite, no matter how voracious. It is exaggerated and large portions because, depending on its preparation, it contains approximately 10 different foods and about 800 calories.
Its abundance is supported by a dish consumed by the harriers before embarking on the long journeys to transport goods on mule back, for which they needed enough strength and energy to make them. This preparation was known as a typical countryman or typical mountaineer.
When the dish began to be marketed in fondas and restaurants, because of the amount of ingredients it contains, it became necessary to serve it on a large crockery, similar to a tray so it was coined the name that bandejaa, with which it is known today around the world.

Ingredients:
  • 3 cups red or mantle beans
  • 2 pounds ground beef
  • 2 pounds of pork rind
  • 2 pounds ground pulp meat
  • 6 sausages
  • 6 eggs
  • 1 lb of rice
  • 3 ripe bananas
  • 4 large onions
  • 4 tomatoes
  • 1 medium carrot
  • Half green banana
  • Oil
  • Salt to taste

The success of the paisa tray is in the preparation of the beans

To make your beans easier to cook, you should put them to soak in a bowl of water. Leave them overnight to make them softer when cooking.

Prepare the hogao by finely chopping the onions and tomatoes. In a frying pan with a little butter and garlic to taste, put them to fry for ten minutes.

For cooking the beans use the express pot, this will save you a little time. Add them, cover them with water and add half the bread, half a green banana and the medium carrot cut into pieces. Let them beep for about half an hour.

After they have whistled, scoop out the carrot, banana, and a cup of water and blend. Add that mixture to the beans again and put them on medium heat - low to thicken.
Prepare the other ingredients of your paisa tray
While your beans are cooking, be sure to finish the other foods in your preparation:

• Sauté the ground beef in a pan with a little oil, salt and the other half of the hogao that you had prepared initially.
• Fried the chicharrones and the chorizos in a pot with very hot oil
• In the same way, prepare the ripe slices in a pan with oil
• In a saucepan, with a little butter and salt, fry the eggs
• Prepare the rice using two cups of water for each cup of rice, a little oil and salt to taste. Let cook over medium heat until the rice is dry.

We are ready to serve our paisa tray. Accompany it with a small white or yellow arepa according to your taste, a portion of avocado and, if desired, a delicious green plantain patacones
